A rooftop restaurant and bar – first announced in mid-2021 as the top tenant of Covington’s Republic Bank building – is on track to open this fall. For proprietor Bill Whitlow, it represents his third concept in the city, and the most upscale to date.
Republic Bank, a six-story, 27,000-square-foot building located at the corner of Madison Avenue and Sixth Street, is undergoing a multimillion-dollar redevelopment.
The restaurant will offer both indoor and outdoor seating. The design is modern but comfortable, Whitlow said. The space is entirely glass-walled and highlighted by 360-degree city views.
A lounge area will serve appetizers and drinks only. It will be available for private or semi-private events, where high tops can be swapped out for a longer table.
In building the menu, he wanted Opal to differ from Rich’s and Hangry Omar’s, which are casual and super casual concepts, respectively.
Rich’s, also on Madison Avenue, features American pub fare with Southern and Creole twists, while Hangry Omar’s offers a selection of beef, pork belly and pimento cheese sliders and fries. Omar’s is part of Covington Yard, a food container park and entertainment venue on Greenup Street.
Opal will specialize in live or open-fire cooking; Whitlow said the restaurant has invested in a specialized 88-inch Infierno grill. It allows for multiple cooking techniques with temperatures that reach up to 700 degrees.
The bar can open to the outside, while the dining room will be anchored by booths and banquettes, and the outdoor space will feature a trio of fire pits. A lounge area will serve appetizers and drinks only. It will be available for private or semi-private events, where high tops can be swapped out for a longer table.
Fairfax-based Manning Contracting is handling the buildout.
